Roast Sticky Chicken (from busy cooks)

Spice Mix for 1 Chicken
2 tsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 large roasting chicken -- as big as you can find
1 cup chopped onion
In a small bowl, thoroughly combine all the spices.
Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin.
Place in a resealable plastic bag, seal and refrigerate overnight.
When ready to roast chicken, stuff cavity with onions, and place in a shallow baking pan.
Roast, uncovered, at 250 degrees for 5 hours (yes, 250 degrees for 5 hours). After the first hour, baste chicken occasionally (every half hour or so) with pan juices. The pan juices will start to caramelize on the bottom of pan and the chicken will turn golden brown. If the chicken contains a pop-up thermometer, ignore it.
Let chicken rest about 10 minutes before carving.
To Freeze.. This can be frozen with just the spice rub on before cooking, but I prefer to make several of these and cook them completely and freeze fully cooked. Simply bag and freeze. Warm in the microwave before serving. Notes : This recipe is a great way to roast a large chicken for planned leftovers. It is reminiscent of those rotisserie style chickens that are so popular now, and it is very easy to make. The meat comes out very moist and flavorful, so it is as good leftover as freshly cooked.
Please try it and you will never roast chicken any other way. You need to start this the night before serving.
***Shirla's Notes: I have made this many times and didn't put the spices on the chicken the night and store it in the fridge over night before and it turned out great.

I've never made this and it sounds really good. However, I'm going to wait till it gets a bit cooler here as it heats up the whole house when I cook. Thanks for posting the recipe!
We are still waiting on cool weather here. When you say parmesan potatoes are you talking about wedges or more of an augratin style?
Heather...Here is the recipe for the parmesan potatoes:
PARMESAN BAKED POTATOES
6 T. butter melted
3 T. grated Parmesan cheese
8 medium unpeeled red potatoes, cut in half*
Pour melted butter into a 13 x 9" pan. Sprinkle Parmesan cheese over the butter. Place potatoes, cut side down, over the cheese. Bake, uncovered, at 400* for 40-45 minutes.
(*I used a 3 lb. bag of small red potatoes and one stick of butter, and roasted them on a cookie sheet.)
He's 16 and he was drunk. i didn't post that part. I grounded him for a week, they gave him 8 stitches and lectured him on drinking. He gets a's and B's in school but I guess does what typical teenagers do. I'm going to walmart on friday and will pick up a whole chicken and try that

we had to go to court last week because he got a ticket for smoking cigarettes. That was his second ticket. thats how I found out he was smoking. Last November when he got his first ticket he swore up and down that it was just cold that morning and it looked like smoke, so I told him if he is innocent then plead not guilty. He did and we took it to trial. Thats just a judge and the officer that wrote the ticket and my son. My son had nothing to say for himself and was found guilty. I was so embarassed for wasting the courts time. I paid the $120 fine. This time the judge just lectured him ans suspended the fine for 6 months only having to pay if he gets another ticket. I was angry that he was not being tought a lesson. He had his own money in his pocket prepared to pay the fine. He is a nice respectful boy that gets good grades so I'm hoping he will grow out of this behavior.
