Wednesday

I didn't sleep very well last night, I was up and down all night and finally drifted off to sleep around 5:30am. It was hard waking up at 7:15am. I did lay back down when Wesley took a nap. I didn't do much today. I did get a ton of laundry folded that I've been putting off and I have some clothes in the washer and dryer to finish. Last night after dinner I mixed up some Imitation Crab Meat salad and that is what I had for dinner, I served it with crackers. Keith is working his part time job and will eat when he gets home. I hope to get to bed fairly early tonight and hopefully stay asleep all night. Seems the older I get the harder it is for me to sleep good at night.

Here my recipe for the Imitation Crab Meat Salad. I'm very proud of this recipe I made it up myself. I Googled seafood salad and looked over a ton of recipes, then I came up with this one and if I do say so myself it is the best I've ever eaten. :)

Shirla's Imitation Crab Meat Salad
I didn't measure anything but the mayo and the Hidden Valley Ranch Dressing.
About 1 tablespoon Hidden Valley Ranch Dressing (the one in the bottle NOT the dry mix)
1/2 cup mayo (I use Dukes)
1 stalk of celery (finely chopped)
1 small onion (finely chopped)
lemon juice (I used one of those plastic lemons and I have no idea how much I used, at first I thought I had gotten heavy handed with it, but after everything hung out all together over night and part of the day it was just the right amount)
a pinch of celery flakes, a pinch of dried minced onion flakes
two-three drops of hot sauce
little bit of salt and pepper
one pound imitation crab meat, flaked.
I mixed the mayo and everything else up and then I added the crab meat and mixed some more. Chill and I served with Captain Crackers.

Sorry that your'e not sleeping well. I dont sleep through the night either. Tomorrow I'm taking a jammie day. I just want to lounge around. I think Isaw a recipe for pot roast on your site and you used cream of mushroom I'm going to look at your older posts and see if I find it. Hope you have a better day tomorrow:)

Okay I just went through all of your posts and didnt see it maybe I'm wrong about thinking it was you that posted it. I do want to make the pms brownies? And the bobo dog you bought your puppy, I buy them for my dog, she loves them.

I didn't sleep last night either. I probably fell asleep around 3am and had to get up at 5:30 to get ready for work. I kept resetting the alarm clock so I could sleep longer.

Your crab salad sounds really good. That is two recipes that I want to make of yours. What are captain crackers?

A question for you? When it gets a little colder are you going to change the I Miss Winter button to I miss summer? ;)

Thats the post I read. What is golden mushroom soup? It's not cream of mushroom? I have my roast defrosting for tomorrow, I will look at Safeway (grocery store) tomorrow. I will definitley take you up on the turkey dinner advice. Las year i looked on foodnetwork.com and everything was so fancy. I want simple, tastey and homey. Im going to make your parmesean potatoes for church tomorrow. Last week all the ladies brought frozen items that you cook. Can you believe I stressed over what to bring:) Oh well.

Im confused on the potatoe recipe. do you roast them on a cookie sheet or bake them in the 9x13 pan

Yea we have campbells soup I just didnt see any. Maybe another store. I made the potatos in a 9x13 pan. I can see how a cookie sheet would be better. Im going to just pour beef broth in the crock pot with the roast and veggies.
