Saturday Update

I've got a full blown cold going on. I have been getting plenty of rest and drinking lots of orange juice. I hope to be feeling better real soon so I can get back to posting on my blog and reading all my favorite blogs. My son Eric is still sick, but he seems to getting better a lot faster then I am.

Checking In For Thursday

Just checking in for a second. I have a cold or something going and have been asleep on and off all day. I didn't have the grandchildren today because of the rain, so I was able to take medicine and sleep all day. My son Eric isn't feeling well either, but he went to work today. He got off early and has been asleep on the sofa. We both have cold like symptoms.

Wash Out Wednesday


Well the rain is still here, there is a break in it now, but the local radar shows a lot more headed my way. The temps are cooler, it is only suppose to get into the 70's today. I love when the temps start to fall. I cant wait until winter. I am so not a summer person.

My son Matt got a call from his work yesterday evening. He has to stay over night for his job today. They are working in Danville, VA which is about 2 hours away and he was supposed to stay overnight two nights, but he has classes on Friday so he can only stay one night. His boss said he could drive (instead of riding with Cory his co worker) and leave for home Thursday after work or not work at all. He wanted to work, so he will be coming home Thursday evening.

Since it is so cool today I put on a pot of beans to soak last night for dinner tonight. So we will be having Great Northern beans, crush hot potatoes and cornbread tonight for dinner.

Rainy Tuesday

Although it doesn't really show up in the photo above it is raining here. It was pouring, but had slowed a bit when I snapped the picture. We haven't had a rainy day here in a long time. I don't really like raining days, they make me want to crawl back in bed and pull the covers up over me and sleep. There is no way I can nap this morning or at all today. All 4 grandchildren are here again today. This morning they were all here around 7:00 am because April and Tina had a meeting to attend at 7:30 am. I was surprised at Tina, normally she is late for everything, but this morning she was actually running on time. April on time for everything! She is so much like my Mama. I often call her Mamaw Jr. lol My Mama was always on time for events and things, she was never late. She had a schedule for everything and she stuck to that schedule, April is the same way. She certainly didn't get it from me. I wish I was more like my Mama.

I cant decide what to make for dinner. I have plenty of boneless chicken breast in the freezer so I guess I'll make something with chicken. I might even pull out my bread machine and make some homemade bread.

Last night I sliced up some banana's and melted some chocolate and them dipped the banana's into the chocolate, I sprinkled some with multi colored sprinkles, I laid them out on a waxed paper lined cookie sheet and popped them into the freezer for about an hour. Then I took them out and put them into a freezer bag and put them back into the freezer. I figured they would make for a nice treat for the grandchildren. I cant wait to see their faces when I pull them out of the freezer, they are going to love them. I forgot to take pics while I was making them, I'll try to snap some pics of them while they are eating them.

Update: By the time the little ones left I was to tired to stand up and cook a big meal. I ended making my go to meal, scrambled eggs, bacon and toast.

Little Ones Everywhere!

Happy Monday everyone. My Monday is going to be super busy. I have all four of my grandchildren here with me today. It is rare for all 4 of them to be here at the same time. My youngest daughter April asked me last week if I could watch Alyssa today, Tuesday and Wednesday. I'll try to get a pic of all four of them together. This is a rare treat for me, and I'm sure by 5:00 pm I'll be ready for bed! lol

Homemade Pizza's For Sunday Dinner

Sunday And A Little Baking

I've been playing lazy most of the day today. I did all my cleaning, laundry and grocery shopping Saturday. I made pancakes for breakfast this morning. After I cleaned the kitchen I read my mail and a few boards then I took a nap. After my nap I went into the kitchen and baked some Peanut Butter Blossoms. Here is the recipe from the Hershey Website, I used the recipe on the bag of Hershey Baking Kisses, it is the same recipe except for the chocolate kisses:
Peanut Butter Blossoms
48 HERSHEY'S KISSES Brand Milk Chocolates
1/2 cup shortening
3/4 cup REESE'S Creamy Peanut Butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar
Directions:
1. Heat oven to 375°F. Remove wrappers from chocolates.
2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

Friday's Here!

Happy Friday! Today is my son Matt's first day of class. He is in the Electrical Apprentice program. He works 4 days a week and class is on Fridays from 1:00 pm until 7:00 pm. He has even had homework before the class started. When Keith picked up his books there was a homework assignment in the pile of books. Yes you read that right, he has a pile of books for the class. I've never seen so many books! lol

Keith normally gets off work on Friday's at 10:00 am, but this morning he got home at 8:00 am, he had work over a few days during the week so they let him go home super early today. Eric worked today, but was home about 11:00 am. I didn't have the grandchildren here today, but Tina stopped by about 11:30 am to get some trash bags. She said she went into work this morning at 6:30 am and was done at 8:30 am.

I'm not cooking dinner tonight, we will either go out or get take out and eat it at home. Linda has a sorority event today at 2:30 pm and she said she might not be back in time to for Walmart Friday. She asked if we can go later when she gets back. I'll have to think about it because when we go late they are often out of a lot of the stuff I buy. I might just go by myself.

Sticky Chicken Thursday!

I'm making Sticky Chicken for dinner tonight. It is so yummy and the house smells so good while it is baking. It reminds me of winter. Our weather has been hot, but the last few days the temps have gone down slightly. Like right now it's about 10:15 AM and the temp is 74, the high today is only supposed to be 85. Back to the Sticky Chicken...the first time I ever heard if it was in 05 on the Penny Pinching board on AOL http://messageboards.aol.com/aol/en_us/articles.php?boardId=325273&func=3&channel=Beauty+%26+Style It sounded really good and all the posters who had made it raved over how good it was, so I had to make it. ;) WOW they were all right, it was delicious and quickly became a family favorite at our house. The recipe says to mix the spices up the night before and coat the raw chicken with the spices and let it sit in the fridge overnight in a plastic bag. I have done it that way and I have also done it by coating the chicken with the spices right before I cook it. Today I coated the chicken with the spices and then shoved the chicken into the oven (OK I forgot to do it last night). I will be making Stove Top stuff, mashed potatoes, green beans, gravy and hot rolls to go with the sticky chicken.

Here is the recipe:
Roast Sticky Chicken (from busy cooks)
Recipe By : Lynn Nelson
Serving Size : 6 Spice Mix for 1 Chicken
2 tsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 large roasting chicken -- as big as you can find
1 cup chopped onion
In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a resealable plastic bag, seal and refrigerate overnight. When ready to roast chicken, stuff cavity with onions, and place in a shallow baking pan. Roast, uncovered, at 250 degrees for 5 hours (yes, 250 degrees for 5 hours). After the first hour, baste chicken occasionally (every half hour or so) with pan juices. The pan juices will start to caramelize on the bottom of pan and the chicken will turn golden brown. If the chicken contains a pop-up thermometer, ignore it. Let chicken rest about 10 minutes before carving.
To Freeze..
This can be frozen with just the spice rub on before cooking, but I prefer to make several of these and cook them completely and freeze fully cooked. Simply bag and freeze. Warm in the microwave before serving.
Notes: This recipe is a great way to roast a large chicken for planned leftovers. It is reminiscent of those rotisserie style chickens that are so popular now, and it is very easy to make. The meat comes out very moist and flavorful, so it is as good leftover as freshly cooked. Please try it and you will never roast chicken any other way. You need to start this the night before serving.

Tuesday Fudge Happenings

So the other night Keith asked me to please make some fudge. I hadn't made it in a long time so I decided to make some today. I am using my Mama's Drop Fudge recipe. It's the easiest fudge to make, but my favorite fudge is the one from the Hershey Cocoa box. I posted that recipe here already in another post. Here is Mama's Drop Fudge recipe:
Mildred's Drop Fudge
2 cups sugar
1/2 cup cocoa
1/2 cup can milk (evaporated)
1/2 cup water
Let above come to a boil and cook until soft ball stage.
Add 1/2 stick butter and dash of salt. Beat with beater (mixer) until it loses its shine, add vanilla and continue beating. Drop by spoon onto wax paper.

***Shirla's Notes: Peanut butter can be added with the vanilla.


I hung some towels outside on my clothes line today. It is real hot here today so I know it wont take them to long to dry. I'm still waiting on Keith to add more lines to my poles so I can hang out everything at one time.

I also ran the vacuum today in the living room, but upright is broke so I had to use my little shop vac. Emma hates that thing! The whole time I was vacuuming she was barking and trying to bite the hose. It is so funny when she does that. She is all of 6 pounds and thinks she can kill the vacuum! lol

Dinner tonight will be pork something. lol I'm not sure how I want to cook the pork chops, I might just BBQ them (baked in the oven with BBQ sauce over them). I'll make a side dish and a veggie.

Monday, Crush Hot Potatoes

Someone on the KF board posted the recipe below. I made them for the first time for dinner tonight and they were amazing! I took a picture if mine after they were done, but I haven't loaded it to my computer yet. I'll post it here as soon as I load it.

Crush Hot Potatoes
Red potatoes
Olive Oil
Kosher Salt
Black Pepper
Herb of choice (Rosemary or chive, etc.) *I used Rosemary tonight

Cook potatoes in boiling water til fork tender.

Preheat oven to 400 degrees.

Generously drizzle olive oil on sheet pan. Place potatoes on sheet pan and slightly press down on each potato with potato masher. Rotate potato masher 90 degrees and mash again....potato should slightly resemble a cookie. Brush tops with olive oil, sprinkle with salt, black pepper and herb. Place pan on top rack and cook for 20-25 minutes...until golden, crispy and sizzling.

Along with the potatoes I fixed Lemon Broccoli Chicken and corn for dinner tonight.

I did a lot of laundry today and I still didn't get it all done. Keith fixed my clothes line yesterday but I didn't hang clothes out today because it kept looking like it was going to pour down raining every time I got ready to go out there to hang clothes out, so I just gave up and used the dryer.

Friday

We just had a nice thunderstorm here about an hour or so again. Lots of rain, a little thunder and lightening. The power never went out so that's a good thing. Earlier this morning my power blinked a few times and we were not even having a storm. It was weird, my computer turned off but the Directv didn't. I'm always nervous when we get thunderstorms because when our power goes out we are always the last ones to get it turned back on.

Keith and I are going out to dinner tonight, so I don't have to worry about what to cook. I think we are going to the Chinese place up the street. Eric and Linda are going to get Subway and Matt isn't home from work yet so I don't know what he will get. If he gets home in time he can go with us. I'm sitting here now waiting on Tina or JJ to pick up the boys, until they leave we cant leave to go to dinner.

I took a picture of Emma the other evening. She was sleeping in her little pink fluffy bed with one of her toys next to her, she looked so cute I just had to snap her picture.

Updated With Pictures: The Day Before Friday

Not much going on, just the normal everyday things. I'm not sure what I'm making for dinner yet. It will probably be something light. I might just scramble some eggs, make some toast and call it dinner. I'm feeling out of sorts today and have been taking the day slow. Do you ever feel out of sorts? I hate it, I cant put my finger on whats wrong nothing hurts, I just feel blahhhhhhhhhhh.

So Wesley and I took a walk to the mailbox to mail a letter a little bit ago. I thought maybe the walk and the fresh air would do me some good. The mailman had already gone, so I just left the letter in the box to be picked up tomorrow (its no money in the mail, just a coupon I'm mailing to an online friend so I don't have any worries about it staying in the box over night, if it was a check then no I wouldn't let it sit overnight in the box). I took my camera with me and snapped some pics.

Cookie Day Wednesday

Today is an overcast day, it's not to hot and it's not really cool, temps are around 75. It's perfect weather to do some baking. I decided to bake some Toll House Chocolate Chip Cookies. They are so easy to make. I've been told that I make the best chocolate chip cookies ever. I don't do anything special, I follow the recipe on the back of the NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels bag. The only thing I do different is I set my oven at 325 degrees and I under bake the cookies, they bake about 12 minutes. I have found that it makes the cookies chewy and not hard when you under cook them. I know they are done when they are just slightly a golden brown. I hardly ever add nuts as the recipe calls for. I will at times add nuts when I'm making them at Christmas time.

The finished cookies, the ones on the left got a little over cooked and are not as chewy as the ones on the right, but they still taste yummy!

Original Nestlé Toll House Chocolate Chip Cookies
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Directions:
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.



PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.



SLICE AND BAKE COOKIE VARIATION: PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in waxed paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies. * May be stored in refrigerator for up to 1 week or in freezer for up to 8 weeks.





FOR HIGH ALTITUDE BAKING (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes.




I think dinner tonight will be roast. I have a roast in the freezer and some carrots that need to be used. I'll have to make some sort of side dish because I don't have any potatoes. I normally put my potatoes and carrot in with the roast as it is cooking. I'll also make biscuits and gravy. I know as soon as my daughter April reads this she will be calling me asking why she wasn't invited to dinner tonight. *giggles* Maybe I'll beat her to the punch and call her before she reads this. She loves it when I make this meal and she loves my chocolate chip cookies. :)

Tuesday

My grandson Wesley came home yesterday. He was gone for a week. His sister Mallory is staying another week with her daddy. I think Wesley was glad to be back. When he was dropped off yesterday he ran up to me yelling "MAMAWWWWWW, MAMAWWWWWW" and then he hugged me. :)
I love listening to Carter and Wesley while they are playing. They were in the kitchen earlier today and I was in the living room. Wesley walked out of the kitchen and into the living room and then he looked at me and asked me where Carter was. I told him that he was in the kitchen. He then walked down the hall and opened Matt's bedroom door and said, "Carter you in hereeeee". Then he closed the door and went to the bathroom door and opened it and said, "Carter you in hereeeee". Then he closed the door and went to Eric's bedroom door, opened it and said, "Carter you in hereeeeeeeeeee". I was giggling and I told him that Carter was in the kitchen, he must not have heard me, because he went into dining room and then peeked around the wall into the kitchen and said, "OHH DARE HIM AREEEEEEEEEEEE". lol Carter said to him, "You just left me in the kitchen, I never left the kitchen". They are just so cute to listen to. :)
I did a lot of laundry today. My clothes line is still laying on the ground so I had to use the dryer. Keith said he will try to get the clothes line fixed this weekend. He said he will probably have to move the pole that are close to the woods, because he thinks they are just to far apart to hold the line. That works for me, because I don't like going to close to the woods when hanging the clothes because I am scared of snakes and I know there are snakes in those woods! :x
Tina picked the boys up around 3:30 pm today, which is pretty early for her. After they left I started fixing dinner. I made Shake And Bake pork chops, mashed taters and broccoli. I hadn't fixed Shake and Bake in a long time. It was actually pretty good. My family all enjoyed it.

Some Of My Recipes

I thought I would post some of my favorite recipes:

Shirla's Imitation Crab Meat Salad
I didn't measure anything but the mayo and the Hidden Valley Ranch Dressing. About 1 tablespoon Hidden Valley Ranch Dressing (the one in the bottle NOT the dry mix) 1/2 cup mayo, 1 stalk of celery (finely chopped), 1 small onion (finely chopped), some drops of lemon juice (I used one of those plastic lemons and I have no idea how much I used, at first I thought I had gotten heavy handed with it, but after everything hung out all together over night and part of the day it was just the right amount), a pinch of celery flakes, a pinch of dried minced onion flakes, two drops of hot sauce, a little bit of salt and pepper, one pound imitation crab meat, flaked. I mixed the mayo and everything else up and then I added the crab meat and mixed some more. Chill and I served with Captain Crackers.

This recipe was posted on the KF board by Kathleen and it quickly became a family favorite in my house:
Ravioli Lasagna
2 bags (approx. 20 oz) frozen cheese ravioli
1 pound Italian Sausage
2 jars Spaghetti Sauce
4 cups shredded mozzarella

Crumble and brown Italian Sausage in skillet (remove casings if you have link sausage). In 9x13 pan, put a thin layer of sauce on the bottom. Lay the frozen ravioli (uncooked and unthawed) in a single layer on top of the sauce. Top with 1/3 of the sausage, 1 cup mozzarella and some sauce. Repeat two more layers, then add a final thick layer of sauce and the rest of the cheese. Cover w/foil and bake at 350 degrees for 1hour, 15 minutes. Remove foil and bake a few more minutes until cheese is melted.
Note: Last night, I made two smaller pans of it. The second pan was a 9 x 9 pan that I lined first with foil. I covered the lasagna with more foil and then froze it. Today, I took it out of the freezer and removed the foil packet and slid it into a gallon-sized ziplock bag. So when I am ready to bake it, all I have to do is slide it back into the baking dish.

Hershey's Cocoa Fudge
2/3 cup Hershey's Cocoa
3 cups sugar
1/8 teaspoon salt
1/1/2 cup milk
4 1/2 tablespoons butter
1 teaspoon vanilla

Combine cocoa with sugar and salt. Add milk; bring to boil, stirring frequently. Cook to 232 degrees or until small amount forms a soft ball when dropped into cold water. Remove from heat; drop in butter. Cool to lukewarm (110 degrees). Add vanilla. Beat until mixture thickens. Pour into buttered pan and cup into squares.

My Mama's Snow Whirl Frosting ( a.k.a 7 min. frosting)
2 egg whites, unbeaten
5 tablespoons cold water
1 teaspoon vanilla
1 1/2 cup sugar
1 teaspoon light corn syrup

Put egg whites, sugar, water and syrup in top of double boiler, with mixer (electric), mix thoroughly. Place over boiling water and heat constantly with mixer until mixture will hold its peak, about 7-9 minutes. remove from heat and add vanilla. beat to mix well. Spread onto cake. This is also good to use for a fresh coconut cake.

Chocolate PMS Peanut Butter Delight
1 Family size box of brownie mix (the size that you bake in a 13x9 pan) Or you can use two regular size boxes.
8 oz. Reese's Peanut Butter Cups (Chopped) ***best to have chilled before chopping. ***I use the miniature size and chop a dozen to go in the brownies and a dozen to go on top of the icing.
Icing:
1/2 cup creamy peanut butter
2 cups confectionery sugar
4-6 Tablespoon milk
Brownies- Preheat oven to 350 degrees. Prepare brownies according to box directions, also add half (about 4oz.) of your chopped peanut butter cups. bake 32-35 minutes. Let brownies cool completely.
Icing- Mix peanut butter and sugar together adding 1 Tablespoon of milk at a time until a creamy consistency is reached. Spread on top of cooled brownies. Sprinkle remaining peanut butter cups on top of iced brownies

My Aunt Lucille's Chicken And Rice Crock Pot Dish
Batter chicken with flour. Layer chicken in crock pot with 2 cans each cream of onion soup and cream of chicken soup (you can use cream of mushroom and cream of celery soup, but I prefer cream of onion and cream of chicken), salt and pepper each layer, start with the chicken, you will end with the soup. Do not add water or milk to the soup! If you find that after it is all done that the soup is to thin you can add a little flour to thicken. Cook in crock pot on low all day. Serve over rice.

Shirla's Mock Eclair's
Topping:
1 cup sugar
1/8 teaspoon salt
1/3 cup cocoa
1/4 cup milk
1/2 stick of marg.
1 teaspoon vanilla
Mix sugar, salt, cocoa & milk in sauce pan, bring to boil, boil for 1 minute. Add marg., vanilla. Set aside to cool.
Crust:
Butter a 9x13 pan with marg. then layer with a single layer Graham Crackers in pan, set aside.

Filling:
2 small packages French Vanilla instant pudding mix
3 1/2 cups Milk
8 oz. Cool whip Mix pudding & milk for 2 minutes. Fold in cool whip. Pour filling into pan on top of graham crackers. Then pour the chocolate topping over the filling, spread out over the filling. Refrigerate until ready to serve

Saturday And Alyssa

My granddaughter Alyssa is going to be staying a few hours with me this afternoon. Her Mama (April) and Daddy (Curtis) are going with Matt fishing at the swamp. I'm so excited, I don't get to see Alyssa to often, it is always a treat to spend time with her.

My Saturday has been a some what lazy one. I did manage to get my bathroom cleaned. I even cleaned out the medicine cabinet in there. I threw away a lot of stuff that had gone out of date.


Dinner tonight will be YOYO (your on your own). Everyone has been snacking on and off all day and no one is hungry for a big dinner. I have been craving egg salad so I'm going to boil some eggs and then mix up some egg salad. My egg salad is very simple. Boiled eggs, mayo, mustard, salt and pepper. Someone told me that the Penzey spice Fox Point is great in egg salad so I might put some of that into it and see for myself. I love it in scrambled eggs.
